Magically easy salad, made quickly!
Especially on vacation it is often the case that we eat way too much … is totally understandable, after all, we are on vacation and want, are allowed and can treat ourselves to something.
However, if you are even remotely like me, then a vacation like this usually ends with a few pounds more in your luggage. Not because I bought so many things or souvenirs, but because there is everything the ice cream, the desserts, the delicious pasta, one or the other cocktail (At the moment I like Pina Coladas way too much again ????) and other delicacies that have settled on my stomach and thighs.
Now, I’m not someone who’s always on a diet to lose weight. Yes, a few pounds less would be nice, then your favorite jeans would not pinch so much. However, I am now ready to say I also want to live and enjoy life . And what are a few pounds more or less? They make me less adorable? NO!
What is always an issue for me after such a gourmet holiday is my bloated stomach, the headache and general malaise, which simply comes from too much, and in my case, the wrong food. Speak Not enough fresh vegetables and wholesome dishes, but too much junk food like pasta, bread, chips and ice cream .
And since I’m in such a situation again ;), I have one of my favorite recipes unpacked to make up for a few of those little sins from vacation …
It’s super easy and really tasty, just give it a try and let me know how you liked it!
Magical broccoli salad
Quantity: For 2 people
Preparation time: about 30 minutes
INGREDIENTS:
½ kohlrabi
½ broccoli
½ celery
1 small red onion
2 tbsp sunflower seeds
2 tbsp pumpkin seeds
2 tbsp sesame seeds
DRESSING:
3 tbsp pumpkin seeds
3 tbsp sunflower seeds
80 ml of water
1 lemon
4 tablespoons olive oil
2 teaspoons of Dijon mustard
salt
pepper
Chilli flakes
Start with the dressing by putting the pumpkin and sunflower seeds in a small bowl. Add water, lemon juice & olive oil, mix well and set aside.
Wash vegetables thoroughly and then everything cut very small . Especially with raw broccoli it is important to cut it very finely, so it tastes really good raw!
Put everything in a large bowl, add sunflower seeds, pumpkin seeds and sesame seeds.
Now add your prepared dressing mixture to your blender / smoothie maker or food processor. Add salt, pepper and chilli flakes as desired .
TIP: If, like me, you are not exactly a spicy eater, then be careful with the chili flakes for the time being.
Seasoning is always possible, but taking out, mmmmhhh, rather difficult. ????
Blend everything well and add to the salad. Mix well and enjoy!
By the way, this salad also goes really well with the Magic bread, totally good ????
EXTRA TIP: I love this salad too with chicken. I often just take the cooked chicken from my Immune power chicken soup, fry it briefly in butter or ghee, add a little salt and spices as desired, and delicious, wholesome food .
